Thai Yam Mama
Spicy salad with instant noodles
Ever since I first saw a picture of a Yam Mama (
It owes its name to the best-known brand of instant noodles in Thailand. The noodles from Mama have a very own flavour and can be found in any well-stocked Asian shop. Of course, you don’t use the accompanying spice powder and oil for the salad, but you can keep both to flavour your next soup.
Ingredients for 2-3 servings
- 2 packs of Mama instant noodles (each 55g)
- 3 Wiener sausages
- 350g minced pork
- 100g cherry tomatoes
- 4 Thai chilis
- one onion
- 2 spring onions
- lime juice
- 4 tbsp fish sauce
- 1 ½ tbsp palm sugar or brown sugar
- 4 stem coriander
- 1 tbsp vegetable oil
Preparation
Firstly, the ingredients should be all prepared in advance, as the preparation of the salad itself is very quick. Let’s start with the three sausages, cut them into diagonal slices, which look nicer than straight slices. Then peel the shallot and cut into fine rings.
Next cut the white part of the spring onions into rings too, we don’t need the green part for the salad. Now rinse the cherry tomatoes and halve them. Then cut the Thai chillies into rings. Finally, wash the coriander stalks and pluck off the leaves and set aside.
Now pour a large glass of water into the wok and bring to the boil. At the same time, bring a pan of water for the noodles to the boil. As soon as the water boils in the wok, heat the sausage slices in it for one to two minutes. Then remove the sausages and pour away the water.
Then add a little oil to the wok and fry the mince, making sure there are no large lumps. Leave the cooked mince in the pan, but remove it from the heat so that it can cool down a little.
As soon as the water boils, cook the noodles - as already mentioned without the seasoning in the packets - for three minutes and then place in a sieve and drain.
Next, mix the lime juice with the fish sauce in a small bowl. Add the sugar and mix well until it has dissolved. Finally, add the chillies to the sauce. Then add the mixed sauce to the mince and mix the two together.
Place the noodles in a shallow bowl and mix with the mince and sauce. Add the sausages, tomatoes, shallots, spring onions and coriander leaves and mix everything evenly. Serve the finished salad lukewarm.
